Swiss Emmental

This cheese is instantly recognisable by the round walnut-sized holes evenly distributed throughout its dense golden paste. Though firm, it has a melt-in-the-mouth texture and a mild, distinctly nutty taste. Emmental is generally considered to be one of the most difficult cheeses to make successfully. "Anyone can make the holes" they say "but only the Swiss can make the cheese".
