This is Spains most famous cheese which is made on the plains of Mancha. It is a beautiful sheeps milk cheese with a firm ivory paste. It has a hard rind impressed with plaited esparto marks with the top and bottom retaining an elaborate pattern of the cheese press. The taste varies due to age. Our cheese is about 3 months old so has a slightly salty but distinctive melt in the mouth taste. Its no wonder it has become Spains best loved cheese.
