Stinking Bishop

Made at Laurel Farm, Dymock in Gloucestershire, this cheese has grown in popularity in the last few years thanks to Wallace and Grommit. Getting its name from the Stinking Bishop pear variety which is made into perry and used to wash this cow’s milk cheese. As with most washed rind cheeses, the odour can have quite a kick, as it does in this cheese, but if tasted Stinking Bishop is a rich, well balanced cheese with a buttery, slightly fruity body.
