Gjetost (or the cheese that looks and tastes like fudge according to our customers).  This is a whey cheese made from a mixture of cow and goats milk. In Norway this dark coloured cheese is eaten for breakfast, shaved into thin slices or eaten with spiced fruit cake at Christmas. The appropriate accompaniment is said to be hot coffee. However you serve this cheese, from its colour, taste or texture it is going to be a great addition to any cheese board.
